3 fl oz (75 ml) light rum
3 tablespoons coconut milk or coconut cream
3 tablespoons crushed pineapple
2 cups crushed ice
2 wedges of pineapple to decorate
Pour all the ingredients into an electric blender. Blend on high speed for about 5-10 seconds only.
Strain the mixture into collins glass(es) and decorate with pineapple wedges. Serve with a straw.
